I think that a lot of us strive to be a little different in our approach when we can. Ultimately whether we want way-out or traditional, I think the most important thing is that you are comfortable with who you are dealing with and able to express what you really want in the cake that they deliver.

I have been baking for over 30 years but started my formal food training just over 20 years ago and haven't stop learning new skills ever since. I have an overriding passion for quality and attention to detail in everything that I am involved in in life and especially in the cakes that we produce.
